OREANDA-NEWS Scientists from ITMO University are trying to create biological additives for food based on chitin, which is extracted from locust shells. This is reported by "Izvestia".

As noted, such an additive will be able to replace traditional fillers from the waste of the meat industry.

As a rule, such fillers are part of the sausages and convenience foods in order to increase the nutritional value.

“The acute question is how to create a cheaper product with the same nutritional properties as meat,” said Alexander Ishevsky, a professor at the Faculty of Food Biotechnology and Engineering.

According to him, locust breeding requires less costs and effort. In addition, the expert said, in terms of nutritional value, locusts surpass the same beef in a number of parameters.
