Experts have studied receipts for a popular type of fast food in more than 40 thousand outlets throughout Russia. To do this, they analyzed data on price and demand dynamics from 2019 to 2023.

According to analysts, the price of chicken shawarma grew within three to five percent per year. At the same time, official inflation at the same time was about 6-12 percent. The exception to the anomaly was 2022, when fast food prices rose by eight percent. At the same time, the demand for shawarma is constantly increasing — since 2021, its sales have increased by 96 percent. According to experts, this is due to the availability of the dish: despite the fact that the price of the product is rising due to ingredients and logistics, chicken is considered a fairly cheap meat.

Prices in fast food cafes in Russia are growing by 1-2 percent per month, said Mikhail Goncharov, founder of the Teremok cafe chain. Fast food is becoming more expensive due to the rising cost of products and salaries to employees. In catering, food prices make up 27 percent of the cost of meals, he added.

As previously stated by analysts of the OFD Platform, due to rising prices for fast food, Russians began to prefer shawarma two to three times more often. This is due to the low cost of the product compared to the prices of other dishes.
