OREANDA-NEWS.  May 16, 2012. Meals made according to the instructions of Heidi Pinnak, Chef de Cuisine of restaurant Egoist, will be offered to Premium class passengers on Estonian Air flights in May. The type of meals offered on board depends on the duration of the flight and time of departure, reported the press-centre of Estonian Air.

Passengers can try a French duck leg confit, Caesar salad Egoist, airsoft Estonian omelette as well as traditional potato salad.

A special gourmet flight on the Tallinn-London-Tallinn route will take place on 14 May. Chef de Cuisine of Egoist Heidi Pinnak and the head of the Estonian Culinary Institute Dimitri Demjanov will be on board to personally introduce and serve the restaurant’s dishes to Premium class passengers.

Restaurant Egoist is the first Estonian restaurant that gets a recommendation as one of the World’s 50 Best Restaurants sponsored by San Pellegrino. The restaurant’s Chef de Cuisine Heidi Pinnak made it into the final of the world’s most renowned chef championship Bocuse d’Or by beating several Michelin star chefs from countries known for their gastronomy. Heidi Pinnak will represent Estonia in the final that will be held in Lyon in January 2013.

The food served in restaurant Egoist is influenced by the new flavours and traditions of France and the Nordic countries.

The goal of Estonia Air’s restaurant project, which started on 1 September 2011 and will last for one year, is to introduce the high level of Estonian restaurants to Estonians and the foreigners who visit Estonia. Estonian Air hopes that this will make the flight more memorable for passengers, offer the chance to experience new tastes, make its menu more varied and introduce the cooking style of Estonian chefs in terms of flavours and ingredients.
