OREANDA-NEWS. Domodedovo Catering Service, the largest in Russia and Eastern Europe in-flight catering company, held Tasting Board for the spring-summer assortment renewal.

The Boards for assortment renewal are held two times a year before every navigation season (spring-summer and autumn-winter). They are intended to get an independent evaluation of dishes (in terms of taste, design, accordance with modern trends) and confirm the renewal menu.

For event attendees, among whom invited media personnel were, the in-flight catering company of Moscow Domodedovo Airport presented more than 100 dishes from the new menu. Among news – such exclusive dishes as e.g. beef stew under chocolate sauce (Choco-Beef), barley risotto, Andalusian-style beef rissoles, pangasius baked in oyster marinade, apple Tatin (French apple dessert) and many other things.

The new trend of flight catering is the appearance of chopped meat in Domodedovo Catering Service’s assortment. Unlike beefsteak it retains juiciness after warm up on board of aircraft.

The guests of event noticed unanimously that differences in taste between economy and business class dishes are almost undistinguished. While business class dishes are distinct in sophistication and originality, the taste of economy class dishes thanks to efforts of Catering cooks are very close to the premium level.

Ilona Fedotova, the head editor of CHEFART magazine, comments on the event: "Everything was impressing – excellently organized work of Tasting Board, professionalism and attitude of participants to the process and, above all, the menu itself. Literally, all new dishes (more than 100 positions!) – snacks, salads, hot dish, desserts – which we tasted that day, deserved the highest appraisal. You’ve got just to envy air travelers flying through Domodedovo, - the flights will become for them the place of the real culinary revelations".

On the passed Tasting Board Domodedovo Catering Service presented new production methods, which came true thanks to purchase of special equipment. The one of news – electric fryer under pressure "MKN" - not only reduces preparation time of sauces to 60 % but preserves natural taste, colour of products, vitamins and microelements. Another novelty – forming equipment "Rheon" for pastry with stuff – will diversify design and create a greater variety of economy class products.

The opportunity to taste the dishes from the new spring-summer menu will come up on the flights of airlines, operating from Domodedovo airport. Today more than 80 % of Russian airlines, performing flights from Domodedovo as well as number of the largest international airlines such as Lufthansa, Emirates, Singapore Airlines, Vietnam Airlines, Swiss, Qatar Airways and others are provided with production of Domodedovo Catering Service.
