The workshop was organized by the All-Russia Fats Research Institute (VNIIZH), the Kuban State University of Technology, the Ukraine R&D Institute of Oil and Fats, and the advertising company Center-Product. Overall, more than 100 leading specialists in the field of oil and fat products production take part in the workshop.

The report relevance stems from the fact that in recent years, Russia has seen an increasingly growing number of companies utilizing modified atmosphere — inert gas media — for storage, transfer and packing of food products in inert environment.
