OREANDA-NEWS. On 03 April 2009 was announced, that Zhitnitsa, new flour from the Altay grain processor PAVA (www.apkhleb.ru) is unique in its vitamin and mineral content. Besides, it is characterized by flexible properties and allows to experiment with baking recipes.

In terms of baking parametres, Zhitnitsa corresponds to standard grades, and is close to wholemeal wheat flour in its nutritional quality. However, unlike wholemeal product, Zhitnitsa is rich in protein and iron, B-vitamins in much larger amounts than typical flour, contains less sugar, and is the only flour grade that is rich in tocopherols. The quality of grinding is similar to standard sorts of flour. This allows to use bread from the new flour in regular consumption unlike wholemeal product or bread with bran content.
