OREANDA-NEWS. On 09 July 2009 was announced, that THE major grain processor in Siberia and the Far East PAVA produces Zhitnitsa wheat flour which is an ideal component for baking gingerbreads.

One of the Altay confectionaries has tried to make this product from Zhitnitsa wheat flour without mixing it to other sorts of flour. According to the bakers, PAVA`s flour is a perfect ingredient for gingerbreads production. Using Zhitnitsa instead of customary mixture of several sorts of flour allowed to cut production costs for raw material while making Russians` favorite baked goods.

Previously the Altay bakers used Zhitnitsa as a component in the flour mixture, when producing gingerbreads. Now Zhitnitsa can be used as a separate product for making tasty and wholesome confectionaries.

The Altay grain processor PAVA led Zhitnitsa flour into the Russian market almost a year ago. This flour contains living grain cells due to which its vitamin-mineral content is several times higher than in other sorts of flour. The company has already received positive responses from the bakeries, concerning Zhitnitsa`s excellent quality characteristics. This flour is extensively used for making ginger goods, croutons, crisp breads, kvass mixtures, eastern flat breads and pastry.
